As an easy salmon tray bake with plenty of Mediterranean veg in a tasty tomato sauce.

You will need

  • 1kg baby potatoes, large ones cut in half
  • 500g courgettes, trimmed
  • 1 red onion, peeled and cut into wedges
  • 1 tablespoon olive oil
  • 2 x 240g packs responsibly sourced Scottish salmon fillets by Sainsbury's
  • 1 lemon, skin peeled
  • 4 sprigs fresh thyme
  • 4 sprigs fresh flat leaf parsley
  • 2 x 390g cartons Sainsbury's chopped tomatoes in tomato juice
  • 100g black olives
  • ½ x 28g pack fresh basil

Step by step guide to making Mediterranean fish tray bake

  1. Preheat the oven to 200ºC, fan 180ºC, gas mark 6. Get out 2 roasting trays.
  2. Put the potatoes in the first roasting tray and the courgettes and onion in the other. Drizzle each with half the olive oil, season with freshly ground black pepper, and toss to coat. Bake for 30 minutes.
  3. Meanwhile, make 2-3 slits in the skin of each salmon fillet, then stuff with small pieces of the lemon peel, and the thyme and parsley sprigs.
  4. Remove the trays from the oven. Add the potatoes to the courgettes and onion, then pour over the chopped tomatoes and scatter over the olives and half of the basil.
  5. Top with the salmon fillets, skin side up. Return to the oven and cook for 10-15 minutes, until the salmon is cooked through.
  6. Remove from the oven and serve garnished with the remaining basil.
