Bread and butter pudding

  • 5 slices of white bread
  • Butter for spreading
  • 70g raisins
  • a pinch of cinnamon
  • 300ml semi-skimmed milk
  • 2 eggs
  • 2 tablespoons brown sugar

Step by step guide to making Bread and butter pudding

  1. Preheat the oven to 180°C, fan 160°C, gas mark 4.
  2. Butter a 500ml shallow, heatproof pie dish. Remove the crusts from the bread, spread each slice with butter then cut into 4 triangles.
  3. Arrange a layer of bread, buttered-side up, in the bottom of the dish, sprinkle over half of the raisins and a pinch of cinnamon, and cover with the remaining bread.
  4. Whisk the milk with the eggs and brown sugar. Pour the mixture over the bread, sprinkle over the remaining raisins and bake for 25 minutes.
  5. Allow to cool slightly before serving.
