Little Ones Cheddar, bean and spinach burgers

These tasty bean burgers are great for all the family, with an easy little gem salad on the side.

You will need

  • 4 slices stale white bread, crusts removed
  • 1 x 410g tin Sainsbury's butter beans, drained and rinsed
  • 1 egg, beaten
  • 100g Sainsbury's frozen spinach, defrosted, water squeezed out and roughly chopped
  • 1 teaspoon dried thyme
  • 50g mature Cheddar by Sainsbury's, grated
  • ½ garlic clove, crushed
  • Pinch ground nutmeg
  • 2 tablespoons crème fraîche
  • ½ tablespoon mayonnaise
  • ½ tablespoon fresh pesto
  • ½ lemon, juice only
  • 2 baby gem lettuces, washed and shredded
  • 125g cherry tomatoes, halved
  • 2 tablespoons olive oil

Step by step guide to making Little Ones Cheddar, bean and spinach burgers

  1. In a blender, whizz the bread into breadcrumbs, tip into a bowl and set aside.
  2. Pulse the beans in the blender and tip out into another bowl, adding the egg, spinach, thyme, Cheddar, garlic, nutmeg and seasoning. Stir in half the breadcrumbs.
  3. Shape into 4 burgers (2 large and 2 small) and coat with the remaining breadcrumbs.
  4. For the salad, combine the crème fraîche, mayonnaise, pesto and lemon juice in a jug for a dressing. Mix the lettuce and tomatoes in a salad bowl and drizzle over the dressing.
  5. Heat the oil in a frying pan. Add the burgers and fry for 2-3 minutes on each side, or until they turn golden. Remove and keep warm. Serve the burgers with the salad and crusty bread.

Cook's tip: These burgers freeze well so will make a great standby supper if you're pushed for time. Make the burgers as above and freeze at the end of step 2, layered between sheets of greaseproof paper and wrapped well.
