You will need
- 1 tbsp vegetable oil
- 1 courgette, cut into 1cm slices
- 1 red pepper, thinly sliced
- 1 red onion, thinly sliced
- 2 x Sainsbury's Garlic & Parsley Flatbreads
- 230g houmous

Step by step guide to making Roasted vegetable pizza with a houmous twist
- Preheat the oven to 180°C/gas mark 4. Heat a griddle pan over a medium/high heat and add a little of the oil. Once hot, griddle the courgettes until softened and golden brown with griddle marks. Set these aside and repeat with the pepper and onion.
- Lay the flatbreads on a baking sheet and spread half the houmous over each, leaving a 2cm border. Spread the griddled vegetables over the top and place in the oven for 10 minutes. Cut into slices to serve.
