You will need

  • 500g Sainsbury's penne rigate pasta
  • 1 red onion, peeled and finely chopped
  • 2 garlic cloves, peeled and finely chopped
  • 2 x 250g packs Sainsbury's fresh baby plum tomatoes, quartered
  • 1 x pack Sainsbury's Freedom Food Endorsed chicken fillets (approx 333g), thinly sliced
  • 1 tablespoon olive oil
  • 2 tablespoons sundried tomato paste
  • Handful pitted green olives (optional)
  • 2 handfuls fresh flat leaf parsley (or basil), chopped

Step by step guide to making Little Ones Mediterranean pasta

  1. Bring a large pan of water to the boil. Cook the pasta according to the pack instructions.
  2. Meanwhile, heat the oil in a pan, add the chopped onion, garlic and chicken and cook gently for 5 minutes.
  3. Add the tomato paste, chopped tomatoes, olives (if using), a cup of water and the parsley (or basil) and cook for another 10 minutes. Using a wooden spoon, mash the olives slightly as you stir the sauce.
  4. Add the pasta and mix everything together before serving.
