Summer paella
A delicious Spanish-style one-pan rice dish, with prawns, chicken and spicy chorizo.

You will need
- 1 large skinless, boneless British chicken breast, cut into 2cm pieces
- 1 teaspoon paprika
- 150g pack diced chorizo by Sainsbury's
- 2 garlic cloves, peeled and finely sliced
- 6 spring onions, roughly chopped
- 1 teaspoon turmeric
- 200g Sainsbury's Spanish paella rice
- 1 red pepper, deseeded and cut into 2cm chunks
- 650ml hot fish or vegetable stock
- 180g pack raw king prawns by Sainsbury's
- 100g frozen British petit pois by Sainsbury's
- 4 small tomatoes, cut into wedges

Step by step guide to making Summer paella
- Toss the chicken pieces in the paprika to coat.
- In a deep pan over a medium heat, fry the chicken, chorizo and garlic until the chorizo has coloured and the chicken has begun to brown.
- Add the spring onions, turmeric, paella rice and red pepper. Stir and heat for 2-3 minutes until the rice is opaque.
- Add the stock. Stir gently then simmer slowly for 10 minutes until the rice is half cooked. You don’t need to stir it.
- Add the prawns, petit pois and tomatoes to the pan. Heat for a further 10 minutes until the rice is fluffy and the chicken is cooked through with no pink colour remaining.
- Season with freshly ground black pepper and serve.
Cook's tip: Always try to use paella rice if possible, as long-grain or easy-cook rice won't absorb the flavours as well.
