  • 25g breadcrumbs (made from day-old bread)
  • 3 tablespoons olive oil
  • 3 leeks, sliced diagonally
  • ½ tablespoon balsamic vinegar
  • ½ teaspoon honey
  • ½ teaspoon wholegrain mustard
  • 50g be good to yourself Greek-style cheese, crumbled
  • ½ unwaxed lemon, zest only

Step by step guide to making Golden crumbed leeks

  1. Dry fry the breadcrumbs in a medium frying pan for a few minutes until golden. Remove from the pan and set aside.
  2. In the same pan, heat 1 tablespoon of the oil and add the chopped leeks. Cook for 10 minutes, until soft.
  3. Meanwhile, whisk together the remaining oil, balsamic vinegar, honey and mustard in a small bowl.
  4. Spoon the leeks into a serving dish and sprinkle over the Greek-style cheese, the breadcrumbs and then the dressing. Scatter over the lemon zest and serve.
