You will need

  • 400g shallots, peeled
  • 1 tablespoon olive oil
  • 1 x 500g pack puff pastry
  • 30g unsalted butter
  • 2 tablespoons dark brown soft sugar
  • 200g chestnuts, vacuum packed
  • 2 tablespoons balsamic vinegar
  • 100g goats' cheese
  • A few fresh thyme leaves

Step by step guide to making Tasty festive chestnut tart

  1. Preheat the oven to 220°C, fan 200°C, gas mark 7. Place the shallots on a baking tray with the olive oil.
  2. Bake 25 minutes, until tender. Remove from the oven and reduce the temperature to 200°C, fan 180°C, gas mark 6.
  3. Cut a circle of puff pastry to fit inside a large, ovenproof frying pan and set aside.
  4. In the ovenproof frying pan, heat the unsalted butter with the brown sugar until melted, then mix in the cooked shallots, chestnuts and balsamic vinegar.
  5. Cook for 2 minutes, then cover with the pastry (so the pastry is on top) and transfer to the oven for 30 minutes until the pastry has risen and is golden.
  6. Leave to rest for 5 minutes, then hold a large plate over the pan (with oven gloves as the pan will be hot) and carefully filp the pan and plate over so that the pastry becomes the base.
  7. Crumble goats' cheese over the tart and sprinkle with thyme leaves for a fab winter warmer.
