John Dory is one of the most distinctive fish in our waters — and also one of the most prized. Beneath its bold exterior lies a beautifully mild, sweet flesh with a firm, fine texture, loved by chefs and home cooks alike.
Also known as St Peter's Fish — the dark thumbprint-like mark on its side is said to be made by the saint himself.

John Dory is a spiky fish to work with, which is why we've done the tricky part for you — removing the head and all fins to make it easier (and safer) to handle in your kitchen. We deliver John Dory on the bone.
