History: We are eight generation winemakers. So we've got history. That history informs, but doesn't dictate what we do. We respect the past, but constantly try to improve upon it. By always looking for better, more natural and sustainable ways to harvest the world's most elegant French wines. The knowledge and wisdom gained by their ancestors is a precious gift. Father to son, harvest after harvest, we have deepened their knowledge of the vines that grow here and have learned to work in harmony with nature.
Regional information: The number 228 represents the average altitude of of the single vineyard hill site where these vines are planted. Pech means 'small hill' in Occitain and Clamensou is the hill plot name. Very poor limestone soils which promote acidity in the grapes.
Vinification: Low yielding vines on deep clay-limestone soils. Night time harvesting, press with juice selection, must clarification at low temperature, fermentation at 16-17°C, matured on lees in stainless steel tanks. Aged in french oak barrels for 5 months (50%), light filtration before bottling.
