To cook on the hob.
Before cooking: Wash or peel and cut into evenly sized pieces. Place potatoes in a large saucepan. Add enough cold water to just cover.
During cooking: Bring to the boil, cover and simmer gently until tender.
After cooking: Drain. Check food is piping hot. All cooking appliances vary. This is a guide only.
To mash.
Follow instructions to cook on the hob. Put back on to warm hob for 1 minute and gently shake them to dry. Mash until smooth and creamy. Add a splash of warm milk, butter and seasoning if liked.
To roast.
Before cooking: Preheat oven. Put 2-4 tablespoons of vegetable oil into the roasting tray and place in the oven. Peel and cut the potatoes into evenly sized pieces. Place potatoes in a large saucepan. Add enough cold water to just cover and bring to the boil for approximately 10 minutes. Drain thoroughly, then holding the lid firmly on the saucepan, shake vigorously to roughen the surfaces. Carefully remove the hot tray from the oven and place the potatoes gently into the hot oil, turn to coat and season. Place tray on the middle shelf of the oven.
During cooking: Turn halfway through cooking. Cook until golden and soft in the middle. Do not allow to become too dark.
After cooking: Check food is piping hot.
