Sound Seafood (Approx. 1.15kg) Whole British Brill.

Whole Brill – Refined, Delicate, and Seriously Good Eating
• Brill (head off, trimmed, 'on-the-bone' and ready to cook)
• Typically 1.3kg (serves 4–6)
• Caught by fishermen in Devon and Cornwall waters and expertly prepared by our fishmongers
• Best roasted whole on the bone for maximum flavour

Brill is often compared to Turbot — and for good reason. It shares the same delicate texture and sweet, mild flavour, but comes at a slightly lower price point, making it an excellent choice for anyone seeking a luxurious fish supper without quite the same price tag.

Each fish is expertly prepared by our fishmongers — head off, fins trimmed, and ready for the oven or grill. At around 1.3kg, it’s ideal for serving 4–6 people — whether roasted whole with lemon and herbs or filleted after cooking and served with a simple butter or white wine sauce.

Brill’s subtle flavour and fine, flaking texture make it perfect for classic preparations that let the quality of the fish shine.

Elegant and understated — a show-stopping centrepiece without the show-off price tag.

Ingredients: Brill (Scophthalmus Rhombus)
