John Dory is one of the most distinctive fish in our waters — and also one of the most prized. Beneath its bold exterior lies a beautifully mild, sweet flesh with a firm, fine texture, loved by chefs and home cooks alike.
Also known as St Peter's Fish — the dark thumbprint-like mark on its side is said to be made by the saint himself.
John Dory is a spiky fish to work with, which is why we've done the tricky part for you — removing the head and all fins to make it easier (and safer) to handle in your kitchen. We deliver John Dory on the bone.
This is a versatile white fish that takes well to classic cooking methods: pan-roast it with butter and lemon, bake it whole with herbs and white wine, or serve it alongside light sauces or seasonal vegetables to let its delicate flavour shine.
Unusual to look at, exceptional to eat.
