Featuring rich salsiccia sausage, sweet-savoury balsamic red onions, and fragrant rosemary, this is a celebration of the region's cooler climate and spirito di montagna. A Pairing Perfetto A fruity Montepulciano, served slightly chilled, will match the richness of the salsiccia without overwhelming it, while the acidic, peppery accents complement the pomodoro beautifully.
