History: The De Bortoli family story is one of determination and triumph that started 90 years ago and is now told, generations later, across the globe. Through their pioneering spirit and continuous innovation, De Bortoli has built a reputation as one of the foremost producers of sweet wines in Australia. Today, as the fourth generation enters the family business, they are amongst the top wine producers in the country with vineyards spanning 6 premium wines regions.
Regional information: The fruit is sourced from De Bortoli's vineyards in New South Wales. A warm dry summer meant that botrytis didn't appear until after the rains in early May 2018. Some foggy mornings helped botrytis to spread throughout the dedicated vineyards before being harvested in late May.
Vinification: The fruit was harvested in late May when botrytis had fully set in. After a careful selection of grapes and gentle pressing, the juice was fermented in stainless steel with a small portion in French oak.
