Orecchiette Pasta with Spicy Tomato Sauce, Anchovies and Crispy Breadcrumbs
Ingredients for 4 people:
500g fresh orecchiette
560g Mutti Pasta Sauce with Chilli
5 anchovy fillets
3 tbsp breadcrumbs
1 tbsp extra virgin olive oil
t.t. salt
Method:
To prepare the anchovy breadcrumbs, melt the anchovies in a pan over very low heat. Add the breadcrumbs and a drizzle of extra virgin olive oil, then toast over low heat, stirring often, until crisp and deeply golden. Set aside. Pour the Mutti Chilli Pasta Sauce into a large pan and warm gently over low heat for about 2 minutes. Bring a large pot of salted water to a boil and cook the orecchiette. Drain al dente and transfer them directly to the pan with the sauce. To serve, toss the orecchiette well with the sauce and finish with a sprinkle of anchovy breadcrumbs. Enjoy!
