500g Baby corn, red peppers, tender stem broccoli, mange tout
400g Tin Coconut Milk
2 tbsp Vegetable Oil
1 tsp Brown Sugar
Vegetable Thai Green Curry
Method
Gently wash and pat dry the kit ingredients. Peel and roughly chop the ginger and garlic. Chop the lemongrass and lime leaf, slice the chilli (removing stalks and seeds) and blitz with the coriander (saving a little for garnish) to a paste in a blender with 1 tbsp of the oil.
Heat the remaining oil in a wok over a high heat and fry the paste until fragrant but not browned. Wash and add the vegetables and fry with the paste
Add the coconut milk and sugar, bring to the boil then reduce the heat and simmer gently for 10 minutes until the vegetables are cooked through but still have a bite.
Serve with sticky rice and top with chopped coriander.
