Regional information: Mendoza is Argentina's premier wine region, producing over 70% of the country's wine. Nestled in the foothills of the Andes, it benefits from high-altitude vineyards (600-1,500m), ample sunshine, and alluvial soils, ideal for viticulture. Malbec is the flagship grape, known for its rich, fruity profile. Other key varieties include Cabernet Sauvignon, Bonarda, and Chardonnay. The region's dry climate and irrigation from Andean snowmelt ensure consistent quality.
Vinification: San Carlos in Uco Valley, with alluvial soils, produces 100% hand-harvested grapes from 20-year-old vines yielding 10-12 tonnes per hectare. Harvest occurs in the last week of April. Fermentation at 25°C lasts 10 days, followed by maceration for 20 days with selected yeasts. Ageing happens in first, second, and third-use French oak barrels for 10 months. Clarification uses bentonite, centrifugation, and 0.65-micron filtration. The wine undergoes cool stabilisation at -4°C for 4 days.
