Vinification: The grapes are entirely hand-picked in small crates and light pressing in a pneumatic press is used immediately after harvest. During vinification, grape varieties and terroir are separated in thermoregulated stainless steel tanks. Reserve wines from older vintages are added to bring complexity and balance to the blend. The wine is aged on the lees for a minimum of 24 months, twice the appellation requirement.
