Produced in Provence by Les Caves du Commandeur, where over 90% of vineyards are certified organic or High Environmental Value, reflecting a commitment to quality and sustainability.

History: With over 100 years of winemaking expertise, the winery refers to the Commanderie of the Knights Templar, who historically owned vineyards in the area and played a key role in the development of viticulture in the region during the Middle Ages. This historical heritage strongly influences the identity of the cooperative.
Regional information: Les Caves du Commandeur are located in Montfort sur Argens, in the Var department, on one of the finest vineyards of the legendary Green Provence between the Mediterranean coast and the Verdon Gorge. The vineyard is a 500 ha area over nine towns (Montfort, Correns Cotignac, Carces, Salernes, Le Val, Thoronet, Entrecasteaux and Villecroze) and 3 appellations (AOP Côtes de Provence, AOP Coteaux Varois en Provence, IGP Var).
Vinification: From clay-limestone soils and 20-40-year-old vines, grapes were machine-harvested between 19 Aug and 26 Sept 2025. Fermentation lasted 12 days at 17°C using natural yeasts in stainless steel tanks, with no malolactic fermentation. The wine was matured in tanks without oak, clarified by sedimentation, filtered by tangential filtration, and cold stabilised.
