To pan fry from chilled. If freezing at home, defrost thoroughly before cooking. Before cooking: Remove sleeve. Set aside sauce sachet. Peel back film and allow meat to reach room temperature for about 10 minutes. Heat 15ml of oil in a frying pan over a high heat. Once oil is hot add the steaks. During cooking: Turn frequently. Fry for 3 minutes for rare and 5-7 minutes for medium. Remove steaks from pan, set aside and allow to rest keeping warm. Place peppercorn sauce in a pan and allow to heat for 1 minute, do not allow to reduce excessively. After cooking: To serve, pour peppercorn sauce over steaks. Check food is piping hot.
