History: Over three centuries, Spier has brought together good wine, regenerative farming, contemporary South African art and warm hospitality - guided by one belief: good wine comes from good people and good soil. Our cellar is led by Johan Jordaan, twice named Chenin Blanc Master Winemaker. Home to one of South Africa's largest contemporary art collections, Spier draws on that art for this range's striking labels. This label features "Nimbus" by Fleur de Bondt - a radiant storm of faceted clouds, capturing the energy of an idea taking shape.
Regional information: The vines for this wine - both trellised and free-standing bush vines - grow in well-drained soils rich with decomposed granite from the mountain foothills. Planted between roughly 10 and 60 kilometres from the ocean, they enjoy warm summer days that rise to around 29°C, cooled by mild winters. It's this balance of sun and sea air that gives the wine its ripe fruit and refreshing lift.
Vinification: We bring the grapes in early, while it's still cool, then destem and lightly crush them, allowing a brief period of skin contact before pressing. The juice settles overnight, after which we select the best parcels - some kept separate, others blended - before a slow, cool fermentation at 12-14°C. The wine then rests on its fine lees to build body and elegance. Unoaked and fantastically fresh, this is Chenin doing what it does best.
