A vibrant vegetarian dish rooted in Northern Indian tradition, our Aubergine Masala is a crowd pleaser and perfect way to elevate any meal.
We roast aubergine in small batches, then fold it into a lightly spiced masala made with cumin, coriander and chilli. We add cherry tomatoes for a sweet tang and fried aubergine pieces for depth and richness.
Lastly, we top the dish with fresh coriander to create that restaurant experience at home.

Before cooking: Preheat oven. Remove sleeve and pierce film. Place on a baking tray on the middle shelf of the oven.
After cooking: Stir thoroughly. Check food is piping hot. Allow to stand for 1 minute. Do not reheat once cooled.
190°C / Fan 170°C / Gas 5, 20 mins
