Our gourmet sausages are influenced by chef and gourmet sausage maker Martin Heap whose sausage recipes were launched into Sainsbury's back in 1996. We use 88% coarsely chopped British outdoor bred pork shoulders and bellies then fill into natural pork casings to give extra succulence and a coarse, meaty texture. This recipe is based on the classic Cumberland sausage, we've made this special by using apple wood smoked black pepper to deliver the peppery kick with a tasty modern twist…

Cooking instructions: Grill
To grill from chilled. Before cooking: Preheat grill. Remove all packaging and place on grill pan. During cooking: Turn occasionally. After cooking: Check food is piping hot throughout and the juices run clear. All cooking appliances vary. This is a guide only. To cook on grill Moderate heat 20 mins
Cooking instructions: Shallow Fry
Pan fry from chilled but can also be grilled. If freezing at home, defrost thoroughly before cooking. Before cooking: Heat 15ml tablespoon of vegetable oil in a frying pan. Once oil is hot add sausages. During cooking: Pan fry on a high heat for 5 minutes to sear the sausages. Reduce heat to moderate and cook for a further 10 minutes. Turn occasionally. After cooking: Check food is piping hot throughout and the juices run clear. All cooking appliances vary. This is a guide only. To pan fry High/Moderate heat 15 mins
