History: Terre di Faiano is a range of organic wines. The aim is to produce organically and sustainable. Biodiversity and use of non-chemical pesticides are used to enhance the fact that we need to protect our environment - in the vineyards and with what we drink.
Regional information: The wine comes from the northern part of the region Puglia (southern part of Italy - heel of Italy). The grapes are influenced by the sunny climate and can reach lovely full ripeness. It is a flat region with no major altitudes - wind, sun and being close to the seaside influence the growing of this grape variety.
Vinification: After de-stemming, the grapes are not crushed, remaining intact, this reduces damage to the skins and optimises colour extraction. Fermentation takes place at 23-25°C for approximately 10 days. Frequent remontage and delestage are carried out in the early stages of fermentation in order to achieve soft extraction of aromas and gentle tannins. After racking, malolactic bacteria are added to induce the second fermentation. 30% of the wine is oaked for 6 months in first passage American oak barriques.
