Our pigs are born outdoors and after weaning are moved inside to be reared in straw bedded barns.
Cooking instructions: Oven
HOW TO COOK TO PERFECTION To oven cook from chilled. 1) Preheat oven to 240°C / Fan 220°C / Gas 9. Remove all packaging and place the joint on a chopping board. Rub the rind dry with paper kitchen roll and cover with 1 tablespoon of salt, working it into the cuts. Leave at room temperature for 30 minutes. Rub all the salt off the joint and from between the cuts, pat dry. Lightly cover the rind with a 1/2 teaspoon of salt. 2) Place the joint in a roasting dish on the middle shelf of the oven to cook for 30 minutes. Turn oven temperature down to 200°C / 180°C / Gas 5 and cook for a further 50 mins. If the crackling is still a bit soft, turn the temperature back up to 240°C / Fan 220°C / Gas 9 for the last 10 mins. 3) Allow the joint to rest for 10 minutes before carving. Check food is piping hot throughout, all juices run clear and no pink colour remains. This is a guide only. All cooking appliances vary.
